5-Spice Pork Chops and Braised Vegetables
Ingredients:
  • Pork Chops (2)
  • 1/2 medium cabbage, sliced
  • 1 yellow onion, diced
  • 1 apple, thin slices
  • 10 Brussels sprouts (quartered)
  • 2 tsp sea salt
  • 1 tsp pepper (or to taste)
  • 1/2 tsp Chinese 5 Spice Powder
  • 1 TBS honey
  • 1 cup chicken broth
Preheat oven to 350F. Heat an ovenproof pan (that has a lid) on the stove top.  Add a healthy fat (butter or lard) and allow to melt, swirling the pan.  Brown the pork chops for about 2 minutes per side.  Set the chops aside on a plate and add the onions to the pan (adding a little more fat if needed).  Scrape up any brown bits and saute for 5 minutes.   Place the chops back in the pan, then add the Brussls sprouts, apples, and cabbage.  Mix honey, broth and spices together and pour over the chops, apples, and vegetables.  Bring to a boil, cover and place in oven to bake for 30 – 45 minutes (bone-in chops take longer).  The meat should be tender and juices running clear – internal temperature of 140 (the USDA recommends an internal temperature of 160).  Your one pot wonder dish is done – delicious AND healthy!!
