Ingredients:
1 whole pastured chicken, about 4 pounds
1 clove of garlic (peeled and mashed)
4 TBS of melted butter
2 tsp sea salt
1/2 tsp pepper
Instructions: Preheat oven to 350 degrees. Place chicken on a roasting pan or a cast iron skillet (our favorite method). Place the garlic clove in the chicken cavity, along with the garlic. Brush the chicken liberally with the melted butter and sprinkle with sea salt and pepper to taste. Roast for approximately 1 hour. Check the temperature; the breast should be 165F and the thighs should be 180F. Once to safe temperature, remove and allow to rest 15 minutes, then cut into parts, carve and serve. Delicious!
