Delicious, one dish meal from Grandma Betty!
Ingredients:
- 4 cups chicken, cooked and cut into small pieces
- 1 cup chopped onion
- 1 chopped green or red pepper (I used red for the color)
- 1 cup chopped celery
- 1 cup chopped carrots
- 2 cloves minced garlic
- ¼ cup soft butter
- 2 cups chicken broth
- 1 ¼ cups uncooked rice (I used 1 cup brown rice + ¼ cup wild rice)
- ¼ cup slivered almonds (optional)
- ¼ cup sliced black olives (optional)
Instructions:
Mix all together in a large crock-pot.
Whisk together in a measuring cup the following and stir into the pot:
- 1 cup tomato sauce
- 2+ teaspoons sea salt
- ½ tsp ground allspice
- ½ tsp turmeric
- ½ tsp curry
- ½ tsp black pepper
Cook on low for 6 to 9 hours (checking/stirring to see that rice is done) or on high for 3 hours. Serves 10
