Delicious, one dish meal from Grandma Betty!

Ingredients:

  • 4 cups chicken, cooked and cut into small pieces
  • 1 cup chopped onion
  • 1 chopped green or red pepper (I used red for the color)
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 cloves minced garlic
  • ¼ cup soft butter
  • 2 cups chicken broth
  • 1 ¼ cups uncooked rice (I used 1 cup brown rice + ¼ cup wild rice)
  • ¼ cup slivered almonds (optional)
  • ¼ cup sliced black olives (optional)

Instructions:

Mix all together in a large crock-pot.

Whisk together in a measuring cup the following and stir into the pot:

  • 1 cup tomato sauce
  • 2+ teaspoons sea salt
  • ½ tsp ground allspice
  • ½ tsp turmeric
  • ½ tsp curry
  • ½ tsp black pepper

Cook on low for 6 to 9 hours (checking/stirring to see that rice is done) or on high for 3 hours.   Serves 10
