LimeGarlicThighs2A new summer recipe for any night of the week!


  • 4 Chicken Thighs (or breast, legs, etc).
  • 1 Tbsp Coconut Oil
  • 1 Lime
  • 3 cloves garlic
  • Salt and pepper


Zest the lime, then juice into a medium sized bowl or blender.  Add the coconut oil and garlic (chopped) then puree with a hand blender or pulse in the blender until a smooth paste. Rub under the skin and slather all over the chicken parts.  Heat a large skillet with fat of choice (coconut oil, butter or lard).  Add the chicken parts once thoroughly heated (can test by sprinkling water – you’ll hear a nice sizzle sound).  Cook for approximately 10-15 minutes per side… should be browned nicely and internal temperature should read at least 180F.
