- 1 whole pasture-raised chicken
- salt and pepper to taste
- 1 whole lemon, cut in half
- half bulb of garlic
- 2 Tbs mixed herbs (sage, rosemary, thyme, etc)
Salt and pepper the cavity, then place the halved lemon and garlic bulb, as well as 1 tablespoon of the mixed herbs inside the chicken. Then sprinkle salt and pepper and the remaining herbs on the outside of the chicken and smoke at 225F with hickory (or whatever other wood you may have) for 3-4 hours or until internal temp is 165F. Yum!!
