Breakfast Made Easy!
A quick and simple recipe for breakfast on the GO!
1 cup cooked mild breakfast sausage (available at Four Corners Farm!)
1 cup of grated cheddar cheese
1 dozen eggs
10 fresh parsley leaves, chopped (optional)
salt and pepper to taste
Preheat oven to 400F. Using a muffin pan (you can use a muffin cup – we usually don’t), measure out a tablespoon of cooked sausage into each muffin cup.  Then add shredded cheese.  Whisk the eggs, adding the parsley, salt and pepper, incorporating thoroughly. Pour evenly into each muffin cup, then give a single stir to combine ingredients.  Place the muffin pan on cookie sheet or jelly roll pan (this is to keep the oven clean if the egg bubbles over).  Bake for 25-30 minutes, or until the egg has puffed and is golden.
